Food, what we eat and how we produce and consume it, “is the single strongest lever to optimise human health and environmental sustainability on earth.”

We therefore must take leadership on this issue, not only to meet the targets of the UN SDGS but to educate the next generation of Hospitality Leaders. Nurtured from the latest industry developments, research and our dialogue with change makers, suppliers, alumni, management, staff, lecturers, instructors, and students, we can no longer ignore the inconvenient truths created by our current food system.

Call for more transparent and ethical food sourcing of our produce including meat and fish.
Bring focus on health to provide our diners with more nutritious food choices across all outlets.

SENSE, IN SHORT

Plant-forward menus
Our menus will be plant-forward by default, reducing our carbon footprint. Diners will have the option for meat or fish at an additional cost.
Transparent sourcing
On the menu will be 80% regional ingredients from within a <250 km radius. This will reduce our ‘food miles’ and lead to lower greenhouses gas emissions associated with transportation.
Ethical sourcing
When selecting animals as sources of protein, we will opt for sources that prioritise animal welfare, selecting animals that are raised and processed under humane conditions.
Health on the menu
With the consumption of additional fruits, vegetables, nuts, seeds, and whole grains we will improve our overall well-being. Expect a reduction in processed ingredients and added sugars.
Community & Culture
We will also take initiatives in organising community events centred around food, such as food festivals and cooking classes to promote social interaction and strengthen community bonds.
Memorable experiences
And finally, the enjoyment of food is not only about the food itself but also the context in which it is consumed. Sharing a meal with loved ones, celebrating special occasions, and enjoying food while sharing stories will bring SENSE to our food and food to our SENSES.
